Lemon Coconut Oat Cookie by Sooby Lynch

Zingy, oaty and delicious, these oat cookies are yummy whatever the weather!

Serves 12 cookies|Takes 20 minutes

INGREDIENTS:

1 Cup Flahavan’s Super Oats
1/2 Cup desiccated coconut
1.5 tsp baking powder
2-3 tbsp plain flour
40g melted butter
1 egg
2 tbsp honey
juice and zest of 1 lemon

METHOD:

In a bowl, place all the dry ingredients and mix together with a spoon

In another bowl, whisk wet ingredients

Add wet mixture to dry ingredients and mix to combine

Place spoonfuls of the mixture on baking tray

Shape with spoon to make them round and quite flat

Bake at 180C for 10-12 minutes
