Summer Berry Loaf by Lili Forberg
This fruit loaf by Lili Forberg will give you the perfect taste of summer!
Serves 8|Takes 75 minutes
INGREDIENTS:
100g of Flahavan’s oats
100g of self raising flour
50g of granulated sugar
50g of brown sugar
1 tsp. of baking soda
A pinch of salt
1 large egg
180ml of buttermilk
120ml of oil / butter
2 tsps. of vanilla extract
130g of raspberries
130g of blueberries
METHOD:
Combine the dry ingredients in a bowl.
Add the egg, butter, buttermilk and vanilla extract and mix thoroughly
Gently fold in your seasonal fruits
Place in lightly oiled loaf tin and bake in the oven for approx. 55 minutes at 180 degrees
