Gluten Free Granola

Packed full of nuts, fruits, seeds and spice...this is a granola well worth trying at home!

Serves 8-10|Takes 45 mins

INGREDIENTS:

400g Flahavan’s Gluten Free Jumbo Irish Pure Oats

70g pecan nuts

40g pumpkin seeds

40g sunflower seeds

1 teaspoon ground cinnamon

½ teaspoon of salt

70g coconut oil, melted

110ml maple syrup

60g sundried cranberries

60g dried apricots, diced

METHOD:

Put the oats, pecan nuts, pumpkin and sunflower seeds in a large bowl and sprinkle over the cinnamon and salt.

Pour over the melted coconut oil and maple syrup and mix well.

Spread onto a large parchment lined baking sheet and bake at 160c/gas 3 for 20-30 minutes stirring halfway until the oats are golden brown.

Keep the pecan nuts away from the edges of the baking sheet to prevent burning.

Allow cool completely before adding the cranberries and chopped apricots.

Store in an airtight container and serve with natural yoghurt or milk of choice.
