Blueberry Compote & Vanilla Yogurt Porridge

A light and fresh fruity topping for your morning porridge - does it get any better?

Serves 4|Takes 10 minutes

INGREDIENTS:

For the Toppings:

200g of fresh blueberries
2 tablespoons of honey
50ml Greek yogurt
1 teaspoon of honey
¼ teaspoon vanilla extract

For the Porridge:

40g of Flahavan’s Porridge Oats
1 cup of milk or water

METHOD:

Put the blueberries in a small pot with the honey on a medium heat and gradually bring to the boil.

Reduce the heat and simmer for 3-5 minutes until the juices are released and thicken slightly.

Remove from the heat and use hot or cold to top your porridge.

It pairs well with some vanilla yoghurt.

Top Tip: This can be made ahead and refrigerated. It will keep for several days in the fridge.
