Banana Oat Breakfast Cookie

Rushing out the door in the morning? Grab a snack packed with banana and oaty goodness

Serves 10 cookies|Takes 15-20 mins

INGREDIENTS:

2 Fyffes Bananas (ripe)
1 egg
1/2 cup peanut butter
1/2 cup maple syrup
200g Flahavan’s Progress Oatlets
1/3 cup chopped walnuts
1 tbsp seeds (sunflower & pumpkin)
1/2 cup raisins
Handful flaked almonds
Bake on 180° for 12 mins

METHOD:

Mash the bananas and mix in the egg, peanut butter, maple syrup, oats, seeds, walnuts and raisins.

When the ingredients have combined well, use an ice-cream scoop to scoop the mixture onto a lined baking tray

Flatten gently

Sprinkle the flaked almonds on top of each cookie and press down gently

Bake at 180° for 10-12 mins or until golden
