Apple & Cinnamon Breakfast Muffins

The perfect prep-ahead snack to add some sweetness to lunchboxes, whether it's for school or office

Serves 8|Takes 25 mins

INGREDIENTS:

1 cup self raising flour
1 cup oats
1 tsp baking powder
1/3 cup brown sugar
2 tsp cinnamon
1/4 cup light oil
1/3 cup milk
1 egg
1 tsp vanilla extract
1 grated apple
1/2 cup walnuts, chopped
TOPPINGS
1 tbsp sugar
2 tsp cinnamon
1 tbsp oats

METHOD:

Preheat oven to 180°
Mix all ingredients together in a bowl
Once mixed, scoop into a muffin tray using an ice cream scoop
Mix the topping ingredients in a small bowl and sprinkle onto each muffin
Bake on 180° for 18 mins
Leave to cool completely before removing from muffin cases
